An easy and quick way to serve flavorful steak. Serve with mashed potatoes (see note below).
Cut the sirloin diagonally against the grain into 12 equal slices. Pound the slices between plastic wrap to 1/3 inch thick. Generously season the meat on both sides with salt & pepper. Mound the arugula on 4 plates and drizzle with balsamic vinegar.
In a large heavy skillet, heat one tablespoon of the olive oil until almost smoking. Add half of the steak slices (do not crowd in the pan) and cook until the bottom is just browned, about 1 1/2 minutes. Turn the meat, sprinkle with half the basil and sage and cook until browned, but very rare, about one more minute. Transfer the slices to a plate. Repeat the process with the remaining olive oil, steak slices and herbs. Reduce the heat to medium, add the butter to the skillet and melt, scraping up the brown bits. Return the steak, herbs and accumulated juices to the skillet, and warm over moderate heat, turning once, for about one minute. Arrange the steak slices on the arugula, Spoon the pan juices and herbs over the steak and serve immediately.
Do not overcook the steak, as the flavor diminishes rapidly! For mashed potatoes, I use Alexia brand, which are found in most fine supermarkets and are easy to prepare and delicious!!
I use Alexia brand frozen Red Potatoes Mashed with Garlic and Parmesan as the side to this dish!!
