Mix all the ingredients, stuff casings, let set in fridge for 12 hours (unless a cure accelerator was used) and run in dehydrator.
Start at 120 F for 1 hour (add 20 minutes if coming out of fridge)
Then 130 F , 150 and 160 for 1 hour each
Finish at 175 F until internal temp of 160 reached.
I think 165 F for 5.5 - 6 hours should work
Let set for two hours before vacuum sealing.
