No flour cornbread with cream corn and cheese
Place cast iron skillet (9-10 inch) or earthenware pan (1-2 quart) in oven. Preheat to 450.
Mix all ingredients except butter. When oven is hot, add butter to skillet. when butter is melted add cornbread mixture and return to oven.
Reduce heat to 350. Bake for 50-60 minutes until lightly browned.
Variation: reserve 1/2 of the cheese and sprinkle it on top before serving.
NOTE: If not everyone likes jalapeno's, reserve jalapenos and place on top of the cornbread mixture after pouring batter into skillet; press half of them partially into the mixture with finger or spoon.
