Trim fat from meat. Rub jerk seasoning evenly over roast. Place meat in a 3 1/2-4-quart slow cooker. Sprinkle meat with thyme; pour water into cooker.
Cover; cook on low-heat setting for 8 to 10 hours or on high-heat setting for 4 to 5 hours.
Prepare Lime Mayo: In a bowl, stir together the mayonnaise, red onion, lime peel, lime juice and garlic. Cover; chill until ready to serve.
Remove meat from cooker, reserving juices. Shred meat, discarding any fat. Skim fat from juices. Add enough of the juices to moisten meat (about 1/2 cup). Stir lime juice into meat.
To serve, use a slotted spoon to place pork mixture onto roll bottoms. If desired, layer with lettuce leaves, sweet pepper rings, and mango slices. Spoon lime mayo onto each sandwich; cover with roll tops.
