1. In large saucepan, heat 2 tablespoons of oil over medium-low heat. Add onions and sugar, and cook, stirring frequently, 7 minutes or until onions are soft. Stir in rice, broth, ½ teaspoon of salt and 1 ½ cups of water. Bring to a boil, reduce to a simmer, cover and cook 17 minutes or until rice is tender.
2. Meanwhile, in large bowl, whisk together vinegar and remaining 4 tablespoons oil and 1 teaspoon salt. Add rice to bowl and toss with fork to combine. Add chicken, grapes, cilantro, and pine nuts, and toss with fork. Serve at room temperature or chilled.
