Suggest a better descriptionIn large skillet, heat oil over medium-high heat. Season chicken breast with salt and pepper. Cook until almost done, about 1 minute per side. Remove from pan. Slice into thin strips.
Melt butter in same pan over medium heat. Add white part of scallions, mushrooms, salt, and pepper. Cook, stirring occasionally, until mushrooms let off liquid and it evaporates, about 5 minutes. Add brandy and cook until almost no liquid remains, about 2 minutes more. Add 1/2 cup of broth and simmer until almost completely evaporated, about 4 minutes.
In large pot, cook fettuccine until almost done, about 7 minutes. Drain and add to mushrooms. Add remaining 1/2 cup broth, cream, scallion tops, salt, and chicken. Simmer until chicken is just done, about 2 minutes.
