This cooks beautifully, the sweet and spicy make a nice combination.
Combine cajun seasoning and brown sugar. Rub over fish.
Saute fishi in oil in large non stick skillet over medium high heat. Each side about 4 minutes.
Blend marmalade and lime juice. Add to pan and swirl in skillet until melted. Turn fish to glaze all sides. Cook about 3 minutes until fish flakes.
Make sure you use cajun with no salt. If it's not salt free the recipe is way too salty.
