Never fails and is delicious!
Put the flour, butter and salt and press Turbo in 2 second bursts- twice times 2 seconds is usually enough. It should look like large crumbs.
Add the egg yolk and 2 tbsp water and press Turbo again - 3x2 seconds. It should still be in clumps.
Turn out onto pastry mat and form into a ball. Wrap in cling film and leave in the fridge for at least 30 minutes. Longer is better!
Bring it out of the fridge a few minutes before you roll it out - it will soften slightly and be easier to roll.
