In a heavy-bottomed, 4-quart covered saucepan cook the onions slowly with the butter and oil in the covered saucepan for 15 minutes.
Step 2:
Uncover, raise heat to medium, and stir in the salt and sugar. Cook for 30-40 minutes stirring frequently, until the onions have turned an even, deep, golden brown.
Step 3:
Sprinkle in the flour and stir for 3 minutes
Step 4:
Off heat, blend in the boiling liquid. Add the wine, and season to taste. Simmer partially covered for 30-40 minutes or more, skimming occasionally if necessary. Correct seasoning. Just before serving, stir in 3 tbsps. Of cognac. Pour into cups over rounds of hard-toasted French bread and serve grated Swiss or parmesan cheese.
Hard toasted French Bread
Place 12-16 slices of French bread cut ¾ to 1 inch think in one layer in pan and bake in preheated 325° oven for about ½ hour. Halfway through the baking each side may be basted with a tsp of olive oil; after baking, each piece may be rubbed with cut garlic.
(need about 2 ½ hours from start to finish, as onions need long slow cooking and simmering to develop deep, rich flavor). You also need to be careful not to burn the onions; check frequently during steps 1 and 2.
