Had this the other night. I could get addicted to it!
1. In a large skillet, saute the onion ans celery in butter until soft but not browned. Add the flour and stir well. Pour in 1 cup chicken broth and bring to a boil, stirring frequntly.
2. Remove the mixture from heat an place ? cup at a time in a blender. Whirl until smooth. Return the blended mixture to the skillet and add the remaining chicken broth, the cream and the peanut butter. Whisk while heating gently. Do not allow the mixture to boil. Season to taste with salt & pepper.
3. Serve hot or cold, garnished with chopped peanuts!
