1) GRINDER SALAD MIX: Add all of the ingredients in a medium bowl and use a fork to mix together until well blended. Set aside.
2) SANDWICH: Preheat the oven to 350 degrees.
3) On a cookie sheet, lay out a piece of parchment paper to cover. Lay three slices of the Mozzarella cheese on the parchment paper, slightly overlapping each other to form a long row of cheese. Place cookie sheet in the oven for 2 minutes--watch closely so it doesn't burn!!
4) When is it melted together and browned on the edges, pull it out and lay out two slices of deli ham and two slices of deli turkey in top of the cheese, in a flat pile. Put back into the oven for 30 more seconds to warm up the deli meat.
5) Put the cookie sheet out of the oven, add tomatoes on top, and then top with grinder salad mix. You can roll up the meat to form a sandwich wrap, or you can eat it with a knife and fork, or you can hold it like a taco to eat it.
