In a 12 inch skillet, heat the olive oil over medium-high heat until shimmering. Cook the onion until translucent, about 3 minutes. Add the garlic and cook just until fragrant, about 30 seconds. Add the ground turkey and cook until no longer pink, about 7 minutes. Add the diced chilies and taco seasoning and stir to combine. Add the water and stir to combine. Bring to a hard simmer. Cover and reduce heat to low. Simmer for 10-12 minutes, until the water sauce is thickened and turkey is well done.
Cook the taco shells per package instructions, or tortillas of choice. Remove taco meat form heat, fill taco shells, and add toppings of choice.
