This is NOT diet food but an easy family favorite! Because you bake it and you can change the baking temperature and time a bit it's a great dish to serve with a roast, ham or something else that bakes. Leftovers (if any) are perfect for breakfast the next day!
Preheat oven to 350 degrees. Grease or spray a 3 quart casserole or 9 x 13 baking pan.
Pour potatoes into colander while combining the rest. The potatoes don't need to completely thaw.
In large bowl (I sometimes just use the casserole itself) combine the sour cream, soup, cheese, salt & pepper. Fold in the potatoes until ingredients are mixed through and fold into casserole.
Combine the corn flakes and melted butter until combined, they should be coated in butter but not soggy. Sprinkle over top of potato mixture.
Bake for 45 minutes until topping is golden brown and potatoes are hot and cooked through.
