From Blue Apron
1) start boiling a pot of water that you can place a colander or strainer over (this is for the bao buns later)
2) slice the veggies:
- potatoes into 1/4 inch thick rounds,
- chop the scallion, and
- finely mince the ginger
- slice cucumber if you're adding that
3a) Mix sauce ingredients of mayo/greek yogurt and sriracha sauce, along with salt and pepper to taste
3b) In another bowl mix the flour, and 1/2 cup of water, salt and pepper to taste,(1/2 tsp and 1/4 tsp respectively are good starting points)
4) Place buns in a strainer or colander over the boiling water, but do not let buns touch the water. Water level should be low enough to not make contact with the bao buns. Cover with lid of the pot and steam for 4-5 min or until soft and puffy.

5) heat a skillet, and while skillet is heating coat sliced sweet potatoes in batter, and fry in the skillet for 5 min per side, or till golden and crispy. (while these are cooking you can start to make the burgers - step 6 below). Once done, transfer to plate with paper towel to soak up excess oil. Salt and Pepper the potatoes as desired.
6) mix the beef, black bean sauce, ginger, the white portion of the scallions (this is the high flavor portion, whereas the green portion is the garnish), salt and pepper, and form patties.
7) once sweet potatoes have been completed and transfered in step 5, start cooking the beef patties in skillet. 3 min per side roughly.
Assemble the slider by:
- coating inside of bun with amt of sauce desired (may/yogurt mix with sriracha)
- place burger and potatoes inside bun
- garnish with scallions (green part)
