Serve this dish with the sauce, steamed rice, Kimchee, pickled ginger, cucumber salad, grilled veg. Can also use lettuce leaves to wrap beef, sauce and rice in (or Korean pancakes?). Serve with a light red like a French Pinot Noir or a Merlot....low in tannins but a bit acidic to cut through the spice.

For the Beef:
Put all Marinade ingredients in a blender and purée.
Place the ribs in a dish or plastic bag and pour in the marinade for at least 4 hours but preferably overnight.
Warm to room temp and grill on direct Medium-High for 2-3 minutes per side.
Cut between bones for easier eating and put in a bowl on serving platter with the pickled sides.
For the Sauce:
Whisk all the ingredients (add water if it is a bit thick...mine was perfect). Can stay in airtight container for 2 weeks.
For the Cucumber Salad:
1/2 large English cucumber, sliced
Kosher salt
1 finely chopped green onion
1 tsp grated fresh ginger
1 Tbsp Gochuguru (Korean Chile powder...I used 1 tsp reg Chile powder and 1 tsp Chile garlic sauce)
1 Tbsp Mirin
1 Tsp Sesame Oil
Place cucumber slices in a colander and sprinkle liberally with salt. Let sit for 15 minutes and rinse well with cold water. Put into a bowl and mix with the other ingredients. Put in the fridge until ready to serve.
