These will knock your socks off. Way better than take out!
If frying (wonton's come out the best when deep fried) warm the oil in a small sauce pan till it reaches 350. If you are baking the Rangoon's preheat your oven to 375.
While the oil is warming, shred the crab into small pieces using a knife or cooking shears. Mix the crab and cream cheese together.
Place wonton's flat on a work surface or cutting board. In a small bowl put a 1/2 cup of water, in a larger bowl place sugar.
Start by placing a tablespoon or so of the crab-cheese mixture in the center of each wrapper.
Start by placing one of the wontons with crab mixture in your hand. dip your finger in the water and then wipe it along the edge of the wrapper. Close your hand to seal the wrapper in to a triangle. Seal the edges together well then fold the pointy parts in making a small purse. Then dip your finger in the water again and dab it on the outside of the wonton. Dip the purse into the sugar bowl till it is lightly covered. complete three Rangoons then place them in the hot oil.
Cook till they are golden brown and then removed them. Place the Rangoons on clean newsprint or paper towels to collect the grease.
Work this way, frying them in threes till they are all cooked. If you are baking them prepare them all then place them on a cookie sheet and cook them till they are brown, flip them over and cook them on the other side.
Serves 6 (2 each)
A good tip for preheating the oil is to place a popcorn kernel in the oil. When it pops it has reached 350.
