Add the chicken to a bowl and add the marinade ingredients, mix and refrigerate for 30 mins.
Heat some oil in a wok over a fairly high heat and fry the garlic until it just starts to turn brown and then quickly add the spring onions and red chillies and stir for a few seconds.
Add the chicken and fry until it begins to brown (around 10 minutes or so).
Add the red bell peppers and fry for a few minutes longer.
Add the bamboo shoots and roasted peanuts and give everything a good stir.
Meanwhile to make the sauce, add the cornflour to a jug or mixing bowl, add the water and whisk together. Add the remaining sauce ingredients, mix well and add to the wok, turning the heat down.
Stir everything together until the sauce has thickened (around 5 minutes or so) and serve with rice or noodles.
