Heat coriander, cumin, and black peppercorn in dry pan allowing to roast. Let cool
Grind roasted spiced with cardamom pods.
Cube lamb 3/4 inch
Put meat and ground spices into bowl with yogurt. Mix well and allow to rest.
Peel onions. Chop 2/3 fine, and 1/3 broad.
Peel and mash garlic
Peel and fine chop ginger
Fine chop chili
Concasse tomato
Heat oil/ghee in braising pot.
Dry coarsly chopped onions, when just soft remove into separate bowl.
Heat more oil/ghee
Dry finely chopped onions with garlic, ginger, chili
Put meat into pot, sear
Fry on high heat for short time
Add tomato purree and reduce. Braise for 5 minutes min
Stir in turmeric
Cover pot and cool in low for 50 minutes
Remove lid and add coarse onions and garam masala. Stir well and cover for 10 more minutes.
Server over rice with naan
