Soak lamb shoulder in cold water and vinegar for five mins
Remove and drain until liquid dissipates , leave while preparing spices
In large bowl, mix all beef spices with olive and canola oils plus herbs (dried rosemary or basil)
Pour beef on top of sauce and mix with hands into the beef incisions
Cover in foil and place in fridge overnight or 3-4 hours in morning if prepared on same day
VEGGIES:
mix veggies with spices and olive oil, set aside
GRILLING
Put foil paper tightly on deep baking tray
Pour one glass of water on top of the foil
Place beef shoulder on top
Cover with foil paper
Preheat over on 200 degrees
Place baking tray in over for 1.5 hours. Check water make sure it hasn’t evaporated. If it has dried, add more water and make sure foil is tightly wrapped. Leave for a further 2 hours.
After 3 hours (half hour before beef finishes cooking) place veggies in oven for half an hour
After cooking time of 3.5 hours, check doneness and if done, remove foil and place on broiler until crispy (keep checking until satisfied with crispness
RICE (to be prepared 45 mins before beef cooking time)
Wash and soak rice for ten mins , drain
Heat canola oil, add rice, salt and spices and mix
Add minced beef and mix with rice
Pour boiling water until it covers rice plus a bit more
Cook on high heat until water starts to dry, then reduce heat until it’s barely there and cover with foil paper in addition to pan cover. Leave for 30 mins
