Combine first five ingredients in medium bowl. Add lamb, stirring to coat. Marinate in refrigerator 1 to 2 hours.
Soak skewers in water for 30 minutes. Preheat grill to medium-high heat (350F to 400F).
Thread lamb, onion, tomatoes, and lemons evenly onto skewers. Grill skewers 5 minutes on each side. Serve with rice pilaf and Feta-Mint Dipping Sauce. Garnish, if desired.
Feta-Mint Dipping Sauce
Whisk together all ingredients in a bowl; cover and chill until ready to serve. Mixture may thicken during refrigeration. To thin sauce, whisk in 1 to 2 tablespoons water, lemon juice, or olive oil. Makes 11/2 cups.
