Preheat oven to 375. Spray muffin tins with cooking spray.
Brown beef, season with salt and pepper. Drain. Add spaghetti sauce.
Cut wontons into 2 1/4 inch circles ( more or less).
Reserve 3/4 cup Parmesan and 3/4 cup mozzarella. For topping.
Start layering, beginning with wonton. Press into muffin tin. Sprinkle a little Parmesan, ricotta, mozzarella and meat sauce.
Repeat layers beginning with wonton. Fill all muffin cups accordingly.
Top all cupcakes with reserved Parmesan and mozzarella.
Bake for 18 to 20 minutes, until edges are brown. Remove from oven and cool 5 minutes. Use knife to loosen edges then pop cupcakes from tin.
