Trim root ends and dark part of the green tops off the leeks. Cut the leeks lengthwise in half. Cut each half into long strips, cut across the strips to finely chop. Wash the lee pieces on plenty of water, drain, and set aside to drip dry
Ina a bowl, whisk the sour cream until smooth. Whisk in the milk, lime juice and salt. Add the feta and stir to blend in. Add the leeks and minces chili pepper(s) and mix gently with a fork to blend. Serve right away.
