Preheat oven to 400.
Stir together sugar, cornstarch, water and food coloring in saucepan until smooth.
Cook over medium heat, stirring until thickened. Continue to cook 1 minute, then remove from heat.
Add margarine, lemon juice and lemon peel.
Pour into baked pie shell.
Spread meringue on pie, sealing edges.
Bake 8-10 minutes.

6 T.sugar
Preheat oven to 350. Beat egg whites with vanilla until soft peaks form. Gradually add sugar while continuing to beat until stiff and glossy. Spread meringue on pie filling, sealing against pastry. Bake 12-15 minutes or until peaks are golden brown. Calories 28
