Not so easy, but absolutely delicious and worth the effort!
For the meringue:
Whip egg whites till firm, then add lemon juice.
Add sugar gradually while constantly whipping until very firm
Butter a spring-form baking dish and spread sugar. Fill baking tin with the whipped egg-whites in form of crust.
Preheat oven to highest temperature. Put baking pan in hot oven and immediately switch off heat.
Let meringue dry in oven for 2 hours.
For the lemon mousse:
Whip lemon juice, egg yolks and sugar together in cooking pan.
On oven top heat mixture over very low heat to thicken while constantly whipping. Leave to cool.
Whip egg-whites till firm
Whip cream till firm
Very carefully mix all together and fill meringue
