This was a favorite of my mothers as well as my husbands. I don't care for lemon but, I will make it for someone else. This is the recipe I grew up with. Enjoy.

Place a piece of parchment paper in the center of the uncooked pie crust. Add the dry beans (using a weight keeps bubbles from forming).
Bake the pie crust at 400F degrees for 12-15 minutes or until golden brown. Remove weights and paper. Set aside to let it cool.
In a medium saucepan, stir pie mix, 1/2 cup sugar, 1/4 cup water and 2 egg yolks (reserve whites for meringue, if needed). Stir in 2 cups water. Stirring constantly with wire whisk, cook on medium heat until mixture comes to a full boil (about 30 minutes).
Remove from heat, pudding will become firm. Stir constantly. Cool five minutes before pouring into pie crust. Cool to room temperature, about 3-4 hours.
Top with meringue or your favorite topping when completely cooled.
Keep refrigerated.
I like to use either 1/2 pound of dry beans or some marbles for weights while baking an empty pie crust. I just store them in a jar marked "Baking weights" until needed. I replace the dry beans after 3-4 uses or if they get too brown. You can also use graham cracker crusts with this pie as well.
