A lower calorie version of your favorite lemon cake.
Pour cake mix into a mixing bowl. Add the two containers of Yoplait 100 Lemon Greek Yogurt and mix. It will be a very thick consistency, not like the normal cake mix when prepared as directed on the box. Add UP TO 1/3 cup of unsweetened vanilla almond milk (I use Almond Breeze & it has 40 calories per serving.). You may use less than the 1/3 cup of almond milk, it just depends on your desired consistency. Spray muffin tin with non-stick spray or line with paper muffin cups. Spoon lemon cake mixture into the muffin tin. Bake according to the time specified on the box for the cake mix. Usually you will bake at 350 degrees for 14-20 minutes. Makes 12 cupcakes.
They are great plain or you can add some fat free whipped topping or low calorie whipped frosting (such as Cool Whip Frosting). Store in an air tight container in the refrigerator (as there are no eggs to preserve them) for up to one week.
