Suggest a better descriptionWash lemons, trim ends, cut in half and slice very thinly into glass container. Add the sugar and use a wooden mallet or small glass to press the sugar into the lemon slices. Apply pressure strongly as you mix these, the idea is to get all the flavor from the lemon slices into the sugar. Let this mixture macerate for a few hours, occasionally pressing and mixing again. Then mix with the water, strain, and serve with ice.
Notes: Grandma Loso used the wooden mallet from her cone shaped colander or strainer to press the lemon mixture. I do not have one of these, so I used the wooden end of my rolling pin. A mortar and pestle would also work. I used the thinner skinned lemons for this, they are usually the smaller ones, the ones I used were about 4 ounces each. There is no written recipe for this, I developed the recipe from memory. It tastes as I remember it.
