Method
Make sweet shortcrust pastry in advance and rest in the refrigerator for at least 30 minutes.
Turn the oven to 200 degrees Celsius.
Select a fluted tart tin about 25-30 cm in diameter and grease with butter.
Roll pastry out to about 3-4 mm thickness, line the tin and ensure the pastry is about 4 mm above the edges. Return to the fridge and rest for 20 minutes. Blind bake as given in the recipe for pumpkin, gorgonzola and membrillo tart.
Preheat the oven to 170 degrees Celsius.
Meanwhile, set about making the lime custard mixture.
Place lime zest, juices, in a small saucepan and heat until warmed through. Set aside to cool.
Strain the mixture, into a bowl and beat in the sugar till smooth and the sugar dissolved, try not to aerate the mixture too much.
Next beat the eggs in a separate bowl and strain through a fine sieve, it helps to rub the bottom of the sieve with a spoon. By sieving the beaten eggs you remove unwanted lumps of egg white. Add the sieved eggs to the mixture, gently fold in the cream and mix till you have a smooth consistency.
Place the blind baked tart in the oven and then slowly pour in the lime custard mixture.
Bake for somewhere between 20-25 minutes, until the custard is just set but not brown nor cracked.
Remove from the oven and allow to rest.
Decorate with blueberries and dust with icing sugar.
Alternately, you can make small tartlets and in that case you will only need 3/5 ths of the wet mixture.
