Suggest a better descriptionCut bacon into chunks, similar in size to a one inch piece of a french fry. In a heavy pan, fry bacon when it turns golden, add shallots. Saute until they turn a light brown color but do not burn. Drain fat, then put bacon aside. In a large bowl, add cheese the butter next to it, and the cream next to that, then the yolk. This can be done ahead of time if desired and put into fridge.
Boil pasta to al dente. Do not rinse. Reserve some water. Add pasta to the mix along with pancetta/bacon.
