Lipton Ranch Dip Mix makes tasty potatoes.
I can't emphasize enough the advantage of cast iron in cooking this dish.
Put baking sheet (I use a Lodge cast iron pizza pan) into oven.
Preheat oven to 450F.
Scrub and cut 2 pounds of small red potatoes into medium sized chunks.
Put potatoes into a ziplock bag and add 1 package of Lipton powdered ranch dip mix.
Close bag and shake to coat. Open bag and add 1/4 cup of Olive Oil.
Close bag and shake again to coat.
When oven is at temperature spread potatoes evenly in a single layer.
Preheating the pan gives gives the potatoes a nice crust.
Bake at 450F for 35 to 40 minutes or until tender turning once approximately half way through the baking time.
Quick and easy a nice throw together dish.
