Suggest a better description1. Pierce a large potato and microwave on high power in 2 minute intervals. Turn the potato each time, until it is easily pierced with a fork, 10-12 minutes.
2. Cook 6 slices bacon over medium heat in a large skillet until crisp, 6-8 minutes. Transfer to a paper-towel lined plate. Let cool, then crumble.
3. Mash the potato (skin and all) well in a large bowl.
4. While it's still warm, fold in Greek yogurt, cheese, milk, butter, chives, and crumbled bacon. Season with salt & pepper.
5. Top with more cheddar and chives. Serve at room temperature with potato chips, celery, and endive leaves.
