A cheesy potato soup with BACON - how can you go wrong?!?
Source: Not even sure!?! I've had this recipe for a long
Dice unpeeled red potatoes and cut into 1/2 inch cubes. Place in a large pan, cover with water, add some salt and bring to a boil. Let boil for 10 minutes or until 3/4 cooked.
In a separate pan, melt the butter and then add the flour, mixing until smooth. Over low heat gradually add the half and half, stirring constantly. Continue to stir until it's smooth and begins to thicken. Add the Velveeta cubes and continue to stir until melted.
Drain the potatoes and add to the cream mixture. Stir in the pepper and garlic powder, to taste. Add the hot sauce. Cover and cook over low heat for 30 minutes, stirring occasionally.
Place soup in individual bowls and top with crumbled bacon, shredded cheddar and diced green onion.
