Slightly Brown zucchini, onion, and bell pepper in olive oil, about 8-10 minutes.
Preheat oven to 400 F. Using a deep dish pie pan, bake empty crust 10 minutes. Lower heat to 350 F.
Mix seasonings, eggs, flour and milk.
Place vegetables in the pre-baked crust. Add sliced goat cheese.
Pour egg mixture over the vegetables and cheese.
Top with chopped tomato.
Bake at 350 F for 45-50 minutes.
Allow to set for 10 minutes.
Slice and serve.
