Peppery Lobster Bisque Recipe
Dice, shallot, celery, carrot, and garlic, place in same bowl.
In Cup combine spices, Paprika, Dried Thyme, tarragon, black pepper, cayenne, salt
Large Stockpot over medium Heat wine, water, and Broth. Add Lobster Tails
Boil 8-10 mins or until pink
Remove lobster and once cooled, remove from shells and dice
Place shells back in pot, simmer for 20 mins
Place liquid through mesh sieve
place liquid in fridge for later use
Melt 1/4 cup butter in Large pot over medium heat. Add in shallot, celery, carrot, and garlic.
Cook 3-4 mins then pour in brandy, and cook until alcohol cooks off (when smell of brandy dissipates move on)
Use Xanthan Gum for thickening ###Add in Flour, stir and cook until creamy buttery
Add Spices, sherry, tomatoe paste, and stock from fridge
Stir well low boil for 30 mins uncovered
Remove from heat and let cool, puree in immersion food processor, with some lobster until almost liquid smooth
Bring back to heat, stir in cream and remaining lobster
