This dish is awesome! Buttery, lemony, lobster with a nice crunch. Delicious!
Take all of the meat out of the claws and tail of the cooked lobster - cut into bite size pieces. Put the lobster in a bowl and drizzle with melted butter (1/2 stick melted). Take the rest of the butter and put in a skillet, squeeze the juice from the lemon in, add fresh dill (about 1/2 cup). Hand crush the ritz crackers into the skillet and toss everything so the butter coats the crackers - I start with a full sleeve of crackers and add more if it does not absorb all of the butter lemon mixture.
Place the lobster at the bottom of a shallow pyrex dish. Cover with the cracker mixture. Bake at 350 for about 20 minutes or golden brown.
Ok to make it in advance and refrigerate. Bring to room temperature before putting into the over for the best result.
