Suggest a better descriptionWarm a small saucepan. Turn off heat. Put the butter in the warm pan and let the butter melt.
Add the half and half.
Mix the cornstarch with the water in a mall bowl and set aside
Slice the green onion into small slices
Mix the green onion parts, then take a third and chop small . Keep separate.
Take another third and chop small. Keep separate.
Warm the cream cheese in a pan on lowest heat until soft.
Add one portion of the small chopped green onion. Add a sprinkle of cajun seasoning and a sprinkle of white pepper. Add the lobster. Mix gently and remove to a bowl.
Take 6 or 8 wonton wrappers. One at a time, spoon a portion of the lobster mixture onto a wonton. Whisk the corn starch mixture, dip your finger into it, and draw a line on two sides of the wrapper. Fold the wrapper over and press down on the sides to seal them.
Warm the butter and cream mixture on low heat, whisking constantly. Once blended, mix the corn starch mixture to blend and dip the butter whisk into the corn starch. Whisk into the butter mixture.
Repeat this many times until sauce starts to thicken. Remove from heat.
Add the second reserved portion of green onion. Sprinkle with cajun seasoning and white pepper. Keep whisking until blended and medium thick.
Put 1/4 inch of olive oil into a medium pan and heat on medium high. When oil lightly smokes, add wontons flat side down. Give them a little room, you may have to do it in batches.
When wontons are brown on the flat side flip them over and brown the other side. Remove to a plate and let them rest for a minute or two.
Plate the wontons and spoon cream sauce on top. Garnish with remaining green onions.
