Beat Butter, Vanilla Essence, Sugar and Egg Yolks, save Whites.
Add Flour, mix till well combined.
Roll out to fit oven tray.
Spread with Raspberry Jam.
Beat Egg Whites with tablespoon, adding Caster Sugar till thick.
Fold in Coconut and spread over Jam.
Bake 200c for 30 minutes.
