As delicious as it is simple and low in fat!
Boil 4 cups of water in a pot with a tight-fitting lid. Add the rice, stir, cover and reduce the heat to low. Chop the onion, garlic and chicken and combine in a bowl. After 25 minutes, quickly add the onion, garlic and chicken to the rice pot and cover it back up. Do not disturb the rice!! After another 20 minutes, stir the sauce and spices into the pot and simmer for another few minutes or until the chicken is cooked through.
