Directions: Prepare the rice according to the directions on the package (except I use chicken broth in place of the water). Stir the rice, soup, chicken, and 1 cup cheese together. Put the mixture in a greased 9 X 13 inch dish. Sprinkle the remaining 1/2 cup of cheese over the top. Cover tightly with foil. Bake at 300 degrees for about 30 minutes or until heated through.
When I made it for the large group, I used a garden blend rice from Sam's Club (Riceland brand). Sometimes I've used water chestnuts, green beans, and diced onion, but I kept it simple since I was feeding a large number of people and didn't know people's preferences. - Christine Mabie
