Cook macaroni according to package directions and drain well. In medium saucepan, melt butter over medium heat and saute onion until tender. Blend in flour, salt, and pepper. Gradually blend in half-and-half and beer, stirring constantly with a wire whisk, until thickened. Remove from heat and blend in 1.5 cups of the cheese until melted. Combine cheese sauce with macaroni and bacon.
Preheat oven to 350 F. Spread macaroni mixture in a buttered 1.5 quart casserole dish, top with remaining cheese, and bake for 30 minutes or until cheese is bubbling and golden brown.
