Suggest a better descriptionMelt butter and add carrots. Cook about 8 minutes. Add milk, paprika, and peppers; bring to a boil. Simmer covered on low until carrots are soft, about 10 minutes.
Transfer carrots to processor and pulse. Add milk mix to thin as needed. Add cheese and puree, pouring remaining milk mix until smooth. Season with salt and set aside.
Meanwhile, cook pasta al dente and drain. Stir in cheese sauce and cook over low heat until heated through about 1 minute. But in baking dish and top with Parmesan. Broil until golden, about 2 minutes.
