This can be served as a main dish or side. My mom always served it with Spam and stewed tomatoes.
Boil macaroni according to package directions. Drain and pour into a square casserole dish (9x9 works well).
Preheat oven to 350º F.
In a saucepan over medium heat melt butter (be careful not to burn). Add flour, salt, and pepper and mix. Add milk to pan. Stir over medium heat until flour mixture is completely dissolved and sauce thickens. Add shredded cheese, a handful at a time, until melted. Pour this cheese sauce over macaroni.
Slice remaining ¼ pound of cheese and place slices on top of casserole. Bake for 40-45 minutes for top cheese to get nice and gooey. Let rest for about 5 minutes before serving.
MY TIPS: Use the best cheese you can find. Specialty store cheddar cheese tends to have the best flavor. The more aged the better, until about 4 years. You can get a fine cheddar at Sam’s club called Black Diamond, but it’s not cheap. It’s well worth the price, though.
I do not use pepper in my casserole because I don’t care for it. It tastes just fine without it.
Take care that when heating the sauce prior to adding the cheese you don’t burn the milk. Medium heat should be the highest setting this sauce should be cooked over. Slow is key.
