Mix dry ingredients together. Cut in butter until coarse crumbs appear. Stir in buttermilk and chill for 30 minutes.
Divide into quarters and roll out with pasta machine on 1.5 setting. Place on parchment lined pan and brush with egg white and sprinkle with salt. Bake at 350 for 15 minutes and then cool on rack. Break into irregular pieces.
