The Middle East goes Hollywood with this healthy partner to crudités and crackers. Cannellini beans, sundried tomatoes and an array of Southwestern seasonings will set off searchlights in the sky at your next festive get-together. And the winner is...Malibu Hummus!
Combine garlic, quartered onion, sundried tomatoes, rinsed parsley in large processor bowl. Pulse until coarse (so still has good texture, not pureed), remove to medum-size mixing bowl. Next, in processor, combine all beans, vegetable oil, horseradish, tabasco, black pepper, cumin, chili powder, lime juice. Process till smooth.
Stir bean mixture together with tomato mixture in the mixing bowl. Add sour cream, stir. Refrigerate for at least and hour to let flavors combine.
Serve with crackers, pita bread, or assorted vegetables.
