A blast of tastes ranging from sweet, cheesy, spicy, and lightly salted, all combined in one extremely fulfilling, easy to make, (Extremely affordable) omelette. The home made pico de gallo on top of the omelette really makes it pop, but is still great without it, if your not all for spicy!..
Start by making the pico de gallo first. First grab a bowl and put all of the cilantro (except for a pinch of it) inside the bowl. Then chop up the tomato into very small pieces and also toss them in the bowl. Next add in half of the finely chopped onions, and also add the pickled jalapenos after also chopping them into small pieces. Next add the lime juice, half of the salt, and the garlic powder, and onion powder. Mix together well and let sit in the fridge until the omelette is ready.
Crack open your 2 eggs and place in bowl, shredd the deli turkey and add to egg. Next add remaining salt and pepper. Beat eggs until the yolk and egg whites are completely combined.
Now in a medium sized skillet, add your corn, spinach, the pinch of cilatro that you left to the side. peppers and remaining onions. Sautee ingredients over a medium flame.
Lower heat & Pour eggs over ingredients once sauteed. Be sure that the eggs cover the complete skillet, creating a circular shape. Once eggs have only have a thin layer off runniness on top, sprinkle on the cheese. Then fold the omelette in half with the cheese in the middle. Heat until egg is fully cooked.
Remove from skillet, place on plate and pour the pico de gallo directly over your omelette and now let your taste buds go to heaven because it's time to ENJOY ! :-)
