Whisk cornmeal, flour, baking powder, salt and sugar in a large mixing bowl. Add egg and milk and mix well. Do not beat. Heat bacon grease in a 9-inch skillet set over medium-high heat until it's almost smoking. Pour in batter and cook until the edges begin to turn golden, about 2 to 3 minutes. Place skillet in a 425 degree oven and bake until golden brown, about 30 minutes. Let cool for a few minutes before slicing to serve.
