Margarita sauce:
Lightly sauté garlic and sambal with butter.
Add tequila and flame off the alcohol.
Add lime juice and heavy cream.
Bring to a boil and reduce slightly.
Thicken with cornstarch slurry and season with S&P.
Butterfly the prawns, leave tail on. Grill or sauté lightly in a pan with butter and lime juice.
Pour warm margarita sauce on a plate and arrange prawns in the sauce.
Garnish with fresh papaya salsa or tropical fruit salsa and a sprig of fresh cilantro.
