I didn't have skewers at hand so I decided to make kebabs without them and, as the weather was not permitting a barbecue, my oven served quite nicely! This is an easy and relaxing way to make kebabs but maintaining that great flavour!
1. Preheat your oven to 200C.
2. While you wait for the oven to heat, prepare your chicken and vegetables. Line two oven proof dishes with aluminium foil and place the vegetables in one and chicken in the other. To make the chicken marinade, mix all the spices with the olive oil in a small dish. Pour evenly over the chicken. Add enough water to the chicken so that it is covered. Drizzle some more olive oil over the vegetables.
3. Place both dishes in the oven and cook for twenty minutes.
4. After twenty minutes, remove from the oven. There will still be some water around the chicken; remove the chicken from it. Pour the remaining juices and water over any accompaniment, for example, rice or couscous, and serve.
