Changes every time we make it
Brown the meat (med/high heat) - a little water will help with breaking up the sausage. Drain fat if there is a lot - we usually use paper towels to soak it up. Add onion and cook. Add garlic, stir for a minute or so.
Add tomatoes, peppers, mushrooms, and seasoning and olive oil (tablespoon or so), stir and simmer (whatever temp keeps a simmer on your stove). After tomatoes have started to cook down a little add a nice helping of wine to the sauce.
*You can also taste it and mess with the seasoning you want too.
We like to have the sauce cook for at least 2 hours, more is always better though. If it starts to get too thick you can add more wine.
