I created this recipe one Thanksgiving when I overcooked the yams so I couldn't make the "normal" glazed yams, with some improvisation, this recipe emerged which we liked better than normal glazed yams.
Preheat oven to 350 degrees. Precook the yams by baking at 350 until tender. Alternatively, you can peel and boil until tender, but I prefer baking. Peel and set aside. Mix together all remaining ingredients except for the yams in a saucepan. Cook over medium heat until thickened. Beat together liquid with pre-cooked yams. Pour into 9x13 pan and bake for 20 minutes at 350.
Notes: I like the jewel yams best which are a bit smaller usually than the "normal" yams. I think they have better flavor, if you use the Jewel yams, maybe use 8 or 9 to equal the volume of normal yams.
